Apple and Blueberry Muffins
Makes 12 muffins.
Ingredients
1 cup organic plain flour
1 cup organic self-raising wholemeal flour
1 teaspoon cinnamon
Pinch of sea salt
1/2 cup raw sugar
3 egg whites
1 1/4 cups apple sauce
1/4 cup (60 ml / 2 fl oz) skim milk
1/4 cup (60ml/2fl oz) Brookfarm Natural Macadamia Oil
1/2 cup walnuts chopped
1 1/4 cups (250 g / 8oz) fresh or frozen blueberries
Method
- Heat oven on a moderate setting 180°C/350°F
- Combine flour, cinnamon, salt and sugar into a bowl and mix well.
- Add the egg whites, apple sauce, milk, oil and walnuts. Mix through until just combined.
- Fold though the blueberries last until just mixed through. Spoon into prepared muffin tins.
- Bake for 25 - 30 minutes until cooked though and golden.
